Settling takes place over a period of 12 to 24 hours, followed by fermentation with indigenous yeasts in concrete tanks. Aging on fine lees in tanks and 600 liter barrels gives the wine a complexity and finesse that highlight the unique terroir of flinty clay and clay limestone soils.
