Winemaking involves hand harvesting, essential for optimal carbonic maceration. This wine is fermented with indigenous yeasts and is not chaptalized, guaranteeing rare aromatic purity. A very small addition of sulfur, only at bottling, ensures its stability, with a total SO of 38 mg l, well below the standards.
