El Pintor Ensamble Prosecco and smoothEl Pintor Mezcal is produced in the town of Yautepec in Oaxaca. It is an ensamble of maguey espadin (agave Angustifolia) and wild maguey cuishe (agave Karwinskii). The harvested plants are cooked in the traditional earth pit, naturally fermented using the natural open air yeast, meshed in a tahona, and then distilled twice in a copper still. The flavor profile mimics the aroma of the agave growing in nature.
