The beans come from a cooperative in Waslala, Nicaragua in the national park, where you are only allowed to grow produce without pesticides. The O'Payo is a medium light cacao with plenty of citrus notes and a very pleasant fruity acidity. This makes it an easy to use chocolate because the chocolate can shine but still let other flavours through. It is the one of our chocolates that are being used by many Michelin chefs!
