モデッロは、ヴェネツィアの人たちが日常的に楽しむデイリーワイン。気軽に親しんでいただけるエントリーレベルのワインながら、清澄剤として卵アルブミンや動物性のカゼインの使用はせず、ベントナイトを使用している、ヴィーガンフレンドリーなワインです。

製造方法： 収穫後、除梗・破砕を行い、果汁はステンレスタンクに移されてアルコール発酵を行います。発酵の進行段階に応じて、1日2回、12～18分間の短時間のポンピングオーバー（循環）を行います、皮への負担を少し抑えながら、ワインの複雑さを引き出します。発酵期間は約初期は14～15℃、一時は20～22℃、終了は25～27℃まで段階的に温度を上げ、最終段階では冷ますアルコール発酵終了後、同じ畑のワインでタンクを満たし、果皮とワインに触れた状態で18～20日間のセラマシオン（醸し）を行って、澱引きさせられます。マロラクティック発酵はステンレスタンク内で行われ、その後フレンチ樽オークへ移され、14か月間熟成されます。熟成はアリエ産オーク樽を使用します。（新樽35％、2年目樽35％、3年目樽30％）
