The vines range in age from 20 to 50 years and are farmed sustainably upon beds of limestone and clay. After a hand harvest the grapes undergo a brief maceration, then native yeast fermentation a gentle pressing followed by 100% malolactic fermentation. The wine is then matured on its fine lees in used French oak before being bottled with no fining and light
