An independent producer in Chablis, the estate has been organic since 2009, earning certification in 2012. Gently harvested and whole bunch pressed, this wine undergoes a long, natural fermentation in stainless steel. It spends around 12 months on lees, followed by another 12 months aging in stainless steel.
