Traditional fermentation with moderately long maceration on skins extracts excellent colour, tannin, and deep flavour. The wine then ages for 13 months in 25% new French oak barrels from artisan Burgundian coopers. Adhering to our non interventionist winemaking philosophy, this wine undergoes
