This long aging period allows the Pediococcus bacteria to develop the desired sourness and also results in the malt profile  acquiring some sweet sherry like flavors

Three Musketeers - Belgian Tripel 9% BYOB display Asphalt or WhiteThree Musketeers was brewed as part of the inaugural Sydney Beer Week Pro Am Competition. We brewed it in collaboration with the homebrewer Nick Vassilev who had the winning entry in the Monastic ale category. For this Belgian Tripel, we hopped it with Loral hops, a hop variety that combines old world noble characteristics with new world hop aromatics. Loral contributes a floral and herbal character followed by a backdrop of citrus and dark fruit
