After harvest, the fruit spent 18 hours on skins before being pressed with full solids and fermented in neutral French puncheons, then aged on lees for eight months to build texture and complexity. Lemon yellow in the glass, it opens with fragrant aromas of nashi pear, honeysuckle, and finger lime, lifted by a hint of tarragon.
